Instructions
Meringue Dust
Whisk egg whites with 50g of sugar until stiff peaks form and the mixture is glossy.
Pipe or spoon small meringue shapes onto a lined baking tray.
Bake at 100°C for 1.5–2 hours, or until completely dry and crisp. Allow to cool fully.
Once cooled, break into pieces and process in a coffee grinder until a fine powder forms.
Store the meringue dust in an airtight container or a glass spice jar with a sifter lid.
To Serve
Dust over desserts, or fruit for a sweet crunch.
