  • 2 Egg Whites
  • 50g Sugar

  • Baking paper
  • Coffee Grinder

Instructions

Meringue Dust

  • Whisk egg whites with 50g of sugar until stiff peaks form and the mixture is glossy.
  • Pipe or spoon small meringue shapes onto a lined baking tray.
  • Bake at 100°C for 1.5–2 hours, or until completely dry and crisp. Allow to cool fully.
  • Once cooled, break into pieces and process in a coffee grinder until a fine powder forms.
  • Store the meringue dust in an airtight container or a glass spice jar with a sifter lid.

To Serve

  • Dust over desserts, or fruit for a sweet crunch.
