Ingredients

Prawns

  • 300 g Prawns, cooked, peeled
  • 150 mL Water
  • 3 g Shape It Powder or use Shape It scoop, see notes
  • 0.46 g thickplus Powder
  • Dash of Tabasco
  • Salt and Pepper to taste
  • Cooking Spray

Parsley Dust

Cocktail Sauce

  • 1/4 cup Mayonnaise
  • 1/4 cup Thickened Cream
  • 2 tbsp Tomato Sauce
  • 1 tbsp Lemon Juice
  • 1 tbsp Worcestershire Sauce
  • Salt and Pepper to taste

  • 300 g Prawns, cooked, peeled
  • 150 mL Water

Parsley Dust

Cocktail Sauce

  • 1/4 cup Mayonnaise
  • 1/4 cup Thickened Cream
  • 2 tbsp Tomato Sauce
  • 1 tbsp Lemon Juice
  • 1 tbsp Worcestershire Sauce
  • Salt and Pepper to taste

Instructions

Prawns

  • Place ingredients into a small saucepan and boil over medium heat.
  • Reduce heat and simmer gently for 2 minutes, stirring occasionally.
  • Pour the mixture into a food processor and puree until smooth. Season to taste with salt and pepper.
  • Lightly spray Shape It Sliced Fruit Mould or line a container with baking paper.
  • Pour the mixture into the prepared Shape It Mould or container to the desired thickness, spreading evenly with a spatula. Cover with a Mould Lid or cling film and refrigerate until set.

Cocktail Sauce

  • Add ingredients into a bowl and mix until well combined. Season to taste.
  • Cover and refrigerate until ready to serve.

Parsley Dust

Assemble and Serve

  • Arrange on a serving plate. Serve with cocktail sauce and garnish with a sprinkle of parsley dust.
  • Before serving, test for IDDSI Level 4 Pureed: To test, use the Spoon Tilt Test and Fork Drip Test. It should be smooth and free of lumps. For more information on IDDSI testing, click here.

Notes

Chef’s Tip

  • 300g of cooked prawns makes about 16 prawns (8 serves).
  • 1/4 cup of mayonnaise makes approximately 185mL of cocktail sauce.
