Ingredients

  • 400 g Cucumber, peeled, seeds removed
  • 4 g Shape It Powder or use Shape It Scoop, see notes

  • 400 g Cucumber, peeled, seeds removed

Instructions

Cook & Puree Food

  • Peel skin and remove all seeds. Discard peel and seeds.
  • Weigh ingredients.
  • Place cucumber in a blender or food processor. Puree until smooth, scraping down sides as required.

Activate Shape It Powder

  • Place pureed cucumber and Shape It Powder into a saucepan, bring to the boil over medium heat.
  • Reduce heat and simmer gently for 2 minutes, stirring as required.
  • Season to taste.

Pour into Mould & Set

  • Shape the cucumber mixture by either rolling it in cling film to form a cylindrical shape or pouring it into a Shape It Mould and covering with the Mould Lid. If using a Shape It Mould, lightly spray it with cooking spray. Once shaped, refrigerate until set.

Store or Serve

  • Store covered in fridge. Slice to shape before serving.
  • Before serving, test for IDDSI Level 4 Pureed: To test, use the Spoon Tilt Test and Fork Drip Test. It should be smooth and free of lumps. For more information on IDDSI testing, click here.
