Ingredients

For Level 3 Moderately Thick

  • 235 g Frozen Mixed Berries
  • 40 mL Water
  • 35 g Sugar
  • 0.92 g thickplus Powder

For Level 4 Extremely Thick

  • 235 g Frozen Mixed Berries
  • 40 mL Water
  • 35 g Sugar
  • 1.22 g thickplus Powder

  • Lamington Tray
  • Rubber Spatulas Small or Medium
  • Electronic Scales

Ingredients

For Level 3 Moderately Thick

  • 235 g Frozen Mixed Berries
  • 40 mL Water
  • 35 g Sugar
  • 0.92 g thickplus Powder

For Level 4 Extremely Thick

  • 235 g Frozen Mixed Berries
  • 40 mL Water
  • 35 g Sugar
  • 1.22 g thickplus Powder

Instructions

  • Place the berries, water and sugar into a saucepan. Bring to a boil, stirring occasionally. Reduce the heat and simmer for 5 minutes.
  • Place into a food processor, add thickplus Powder and puree until smooth.
  • Pass sauce through a fine sieve to remove the seeds.
  • Serve cold or at room temperature.
  • Before serving, test for IDDSI Level 3 Moderately Thick or 4 Extremely Thick: To test, use the Flow Test, Spoon Tilt Test and Fork Drip Test. For more information on IDDSI testing, click here.
