Ingredients

Bread

  • 100 g white or wholemeal bread, crusts removed (100g is 6 slices of bread)
  • 800 mL full cream milk
  • 5 g Shape It Powder or use Shape It Scoop, see notes

Chicken and Mayonnaise

  • Pureed Chicken
  • 200 mL mayonnaise

Cheese Slices 

  • 100 mL full cream milk
  • 1.5 g Shape It Powder or use Shape It Scoop, see notes
  • 3 g sodium citrate
  • 50 g Tasty cheddar cheese, freshly grated
  • 50 g full-fat cream cheese

Ham

Tomatoes

Avocado

  • 1 Avocado
  • Salt and pepper to taste 

Tuna and Mayonnaise

  • 425 g Canned Tuna in spring water, drained
  • 40 g Mayonnaise
  • 15 mL Lemon juice
  • 9.2 g thickplus Powder
  • Salt and pepper to taste
  • 35 g Red Capsicum, finely chopped (Optional)
  • 25 g Red Onion, finely chopped (Optional)

Salmon and Mayonnaise

  • 425 g Canned Salmon in spring water, skinless, boneless, drained
  • 40 g Mayonnaise
  • 15 mL Lemon Juice
  • 9.2 g thickplus Powder
  • Salt and pepper to taste
  • 35 g Red Capsicum, finely chopped (Optional)
  • 25 g Red Onion, finely chopped (Optional)

Curried Egg

Equipment

  • Robot Coupe Blixer 3 or 4 or Stick Blender / Food Processor
  • Lamington Tray lined with baking paper, allowing the paper to overhang 
  • Cookie cutters

Ingredients

Bread

  • 200 mL mayonnaise

Cheese Slices 

  • 100 mL full cream milk
  • 1.5 g Shape It Powder or use Shape It Scoop, see notes
  • 3 g sodium citrate
  • 50 g Tasty cheddar cheese, freshly grated
  • 50 g full-fat cream cheese

Ham

Tomatoes

Avocado

  • 1 Avocado
  • Salt and pepper to taste

Instructions

Bread

  • Line a lamington tray with cling film or baking paper.
  • Place the bread into a food processor, process to fine crumbs, then place into a bowl.
  • Whisk milk and Shape It Powder in a saucepan, bring to the boil over medium heat. Simmer gently for 2 minutes, stirring occasionally.
  • Pour the hot soaking solution over the crumbs and mix well until smooth, ensuring they are completely saturated.
  • Immediately pour the mixture evenly onto the prepared tray, smoothing it out to the thickness of a standard bread slice. Fold the overhanging cling film over the surface to shape and cover.
  • Refrigerate until set.

Sandwich Fillings

  • Prepare each sandwich filling to IDDSI Level 4 Pureed (see below), or build your own sandwich using our range of pureed salad vegetables and protein recipes. See Notes for preparation timing and recipe yields.
  • Keep components separate to maintain their individual flavours and familiar presentation.

Assemble and Serve

  • Layer sandwiches with desired fillings as you would assemble traditional sandwiches.
  • Cut into ‘slices’ of bread using cookie cutters. You can use any size or shape you desire for creative effect. Serve chilled or at room temperature.

Chicken and Mayonnaise 

  • Prepare chicken ahead of time to IDDSI Level 4 Pureed.
  • Turn set chicken onto a chopping board, dice into 1cm pieces, place in a mixing bowl and gently fold through the mayonnaise. Season to taste.

Cheese Slices

  • Prepare cheese slices ahead of time to allow time to set, see notes.
  • Whisk milk, sodium citrate and Shape It Powder in saucepan, bring to the boil over medium heat.
  • Reduce heat and simmer gently for 2 minutes, stirring occasionally.
  • Whisk in one spoon of cream cheese at a time to simmering liquid, melting before adding the next one.
  • Remove any lumps or separation then pour into prepared tray.
  • Smooth it out to an even layer, matching the thickness of sliced cheese.
  • Fold the overhanging edges of baking paper over the surface to shape and cover.
  • Refrigerate until set.
  • Use as a sandwich filling and proceed to Assemble and Serve. 

Ham

  • Prepare ham ahead of time to allow time to set, see notes.
  • Whisk water and Shape It Powder in a saucepan, add ham. Bring to the boil over medium heat.
  • Reduce heat and simmer gently for 2 minutes, stirring occasionally.
  • Transfer the mixture to a blender or food processor and add thickplus Powder.
  • Puree on high until smooth, scraping down sides as required.
  • Pour into the prepared tray. Smooth it out to an even layer, slightly thicker than a slice of ham.
  • Cover with cling film and roll lightly with a rolling pin to the desired thickness.
  • Refrigerate until set.
  • Use as a sandwich filling and proceed to Assemble and Serve.

Tomatoes

  • Prepare tomatoes ahead of time to IDDSI Level 4 Pureed.
  • Use as a sandwich filling and proceed to Assemble and Serve.

Avocado

  • Cut the avocado in half and scoop out the flesh. Add to a food processor.
  • Puree avocado until smooth, then season to taste.
  • Before serving, test for IDDSI Level 4 Pureed: To test, use the Spoon Tilt Test and Fork Drip Test.It should be smooth and free of lumps. For more information on IDDSI testing, click here.
  • Serve immediately. Spread a thick, even layer onto prepared bread. 

Tuna and Mayonnaise 

  • Place all ingredients into a food processor. Optional: For extra flavour and colour, add red capsicum and red onion.
  • Puree on high until smooth, scraping down sides as required. Season to taste.
  • Pass pureed tuna through a fine sieve to achieve a smoother consistency.
  • Serve immediately. Use as sandwich filling and proceed to Assemble and Serve.

Salmon and Mayonnaise 

  • Place all ingredients into a food processor. Optional: For extra flavour and colour, add red capsicum and red onion.
  • Puree on high until smooth, scraping down sides as required. Season to taste.
  • Pass pureed salmon through a fine sieve to achieve a smoother consistency.
  • Serve immediately. Use as sandwich filling and proceed to Assemble and Serve.

Curried Egg 

  • Prepare egg to IDDSI Level 4 Pureed.
  • Leave to cool for 5 minutes, then stir through mayonnaise, curry powder and season to taste.
  • Serve immediately. Use as sandwich filling and proceed to Assemble and Serve.

Notes

Chef Tips

  • Cheese Spin Wheels – Place the cheese along one end of the bread, roll it up tightly, and slice into bite-sized pieces to create pinwheel-style snacks.
  • For large quantities – Ask your bakery to slice the bread lengthways.
