Ingredients

Sausages

  • 500 g Pork Mince, cooked
  • 1 tsp Ground Fennel
  • 1 tsp Garlic, finely chopped
  • 60 mL Red Wine
  • 125 mL Chicken Stock
  • 2 tsp Honey
  • 3 tsp Oregano, fresh, finely chopped
  • 10 g Shape It Powder or use Shape It Scoop, see notes
  • 3.7 g thickplus Powder
  • Cooking Spray

Sausages

  • 500 g Pork Mince, cooked
  • 1 tsp Ground Fennel
  • 1 tsp Garlic, finely chopped
  • 60 mL Red Wine
  • 125 mL Chicken Stock
  • 2 tsp Honey
  • 3 tsp Oregano, fresh, finely chopped
  • 10 g Shape It Powder or use Shape It Scoop, see notes
  • 3.7 g thickplus Powder
  • Cooking Spray

Instructions

Sausages

  • Place the pork, garlic, fennel, and wine into a saucepan over medium-high heat.
  • Cook for 3 minutes or until mince has browned. Stir with a wooden spoon and break up any lumps.
  • Pour the mixture into a measuring jug and add chicken stock to make the total volume 500mL.
  • Return mixture to the pan, add Shape It Powder and the remaining ingredients.
  • Bring to the boil over medium heat, then simmer gently for 2 minutes, stirring occasionally.
  • Pour the mixture into a food processor and puree until smooth, scraping down the sides as required. Season to taste with salt and pepper.
  • Lightly spray Shape It Sausage Mould or line a container with baking paper.
  • Pour the mixture into the prepared Shape It Mould or container to desired thickness, spreading evenly with a spatula. Cover with Mould Lid or cling film and refrigerate until set.
  • Store in the fridge or freezer, or remove from mould and prepare to serve. Leave whole or cut into individual sausages.

  • Prepare each vegetable to IDDSI Level 4 Pureed including carrots or peas. Or select from our range of pureed vegetable recipes.
  • Keep components separate to maintain their individual flavours and familiar presentation.

Assemble and Serve

  • To serve, turn out portions of pureed sausages, carrots and peas from the moulds and arrange them on a plate.
  • Season with salt and pepper to taste.

  • Before serving, test for IDDSI Level 4 Pureed: To test, use the Spoon Tilt Test and Fork Drip Test. It should be smooth and free of lumps. For more information on IDDSI testing, click here.

Notes

Chef’s Tip

  • Spray measuring spoon used for honey lightly with cooking oil to stop it sticking.
  • Serve a delicious sauce over the top to serve.
  • The Shape It Sausage Mould holds 100mL and can be easily split into two 50mL portions, perfect for serving as mini meals.
